Using only the freshest and finest product that is sustainable and responsibly fished, Uchiko works with our suppliers to source fish products that are traceable whenever possible.
We maintain close relationships with local farmers and fly in seafood every day from the Toyosu market in Japan. Combining seasonal ingredients with an infinite spectrum of seafood from around the globe, we invite our diners to expand their gastronomic boundaries by pairing traditional Japanese offerings with new and refreshing flavors and textures.
